• 6 medium beets (peeled and slice into small chunks)
• 2 ½ tablespoons olive oil, divided
• 1 teaspoon garlic powder
• 1 teaspoon kosher salt
• 1 teaspoon ground black pepper
• 1 teaspoon sugar
• 3 medium sweet potatoes chunks
• 1 large chopped sweet onion

Pre-heat oven to about 200 degrees C (400 degrees F).

Put the beets in a bowl with 1/2 tablespoon olive oil to coat it. Place onto a baking tray in a single layer.

In a big resealable plastic container, mix the remaining 2 table spoons of olive oil, garlic powder, salt , pepper and sugar. Put the onion and sweet potatoes into the bag. Seal the bag and shake it with the oil mixture to coat the vegetables.

Bake the beets in a preheated oven for 15 minutes. Mix sweet potato mixture on baking sheet with beets. Continue to bake for 45 minutes , stirring for 20 minutes, until all vegetables are moist.
